This Video shot at Brown B Que Restaurant in Austin, Texas shows how it can be done. Special Thanks to Thurman, Claudia and Kenneth Brown (Long Lost Cousins).

RECIPE- Smoked Vegan BBQ Baked Potato

(1 Entree, Appetizer or Side Dish)

Vegan BBQ! Smoked Veggie Baked Potato Recipe created for Brown B Que in San Antonio, TX with a little help from BBQ RESCUES!

Ingredients

1 Baked Potato

1 Onion (cut in half)

1 Tomato (cut in half)

4 Springs of Green Onion

BBQ Rub

Olive Oil

BBQ Sauce

 

Preparation

  1. Cut Veggies, marinate in Olive Oil and your favorite BBQ Rub (BBQ RESCUES! Rub Recipes) 
  2. Smoke Veggies on Hickey, Mesquite or (your favorite) Wood Smoker for 15-30 Minutes.
  3. Remove Veggies from Smoker. Chop into 1″ portions. Season Potato with BBQ Rub, add Chopped Veggies on top. Finish with a drizzle of BBQ Sauce and final dusting of Rub.
  4. Enjoy
