Grilled Vegetarian Gumbo (Serves 8)

Catering or Hosting a Big Party? It is better to start with a pot of Well-Seasoned, Mild, Vegetarian Gumbo. It can be perfectly delicious served with Diced Grilled Vegetables. Then split into a second pot to add Smoky Grilled Shrimp, Crawfish, Chicken, and/or Andouille (or Mild) Sausage. Another option is add Meats, and Spicy Hot Sauce to individual Servings. Be mindful of any Guests who may want to avoid Shellfish, Pork or Hot Spicy foods.

Ingredients:

8- Variety Yellow, Red and Orange Bell Peppers

3- Bell Green Peppers

1- Bunch Celery

4- Large Carrots

2- White Onions

2- Cups Urban Press Petite Wine

1- 16 Oz. Can Stewed Tomatoes

1- Cup Chopped Garlic

1/2 Cup- Chopped Green Onions

1/2 Cup- Chopped Fresh Parsley and/or Rosemary

4 Tbsp- Superfood BBQ Rub or Seasoning

2 Tbsp- Browning and Seasoning Liquid

2 Tbsp. File Powder

4 Cups Vegetarian or Onion Broth

2 Tbsp. Louisiana Cayenne Hot Sauce (optional, to taste)

Salt/Pepper to taste

Preparation:

1. Season, Marinate and Smoke Peppers, Celery, Carrots and Onions for at least an hour. Reserve 1/2 for Puree, Dice 1/2 for soup and cover with 3 Cups Vegetable Broth, simmer slowly.

2. Pan Roast Chopped Garlic, heat with Wine and remaining Veggies. Puree until smooth and combine with 1 Cup Broth to make Smooth. Add to pot with Stewed Tomatoes. Season well with BBQ Seasoning, Browning and Seasoning Liquid, File Powder, Salt, Pepper and Hot Sauce to taste.

3. Reserve Green Onions and Parsley for Garnish.

Fresh Berry BBQ Sauce Recipes

For Easy (EZ) Quick Start Recipe, Chef Randy starts with McClard’s BBQ Sauce and uses Blackberries. You have option of using your favorite Red BBQ Sauce or make Homemade All Natural BBQ Sauce. There is also a Quick Sauce you can make by mixing BBQ Dry Rub with any Ketchup you may have in the Pantry.

INGREDIENTS LIST (OPTIONS)

Prepared Red BBQ Sauce

Prepared Ketchup (May by Organic, Low Salt, etc…)

Fresh Berries (Blackberries, Blueberries or Raspberries)

Berry Jam (Blackberry, Blueberry, Cranberry or Raspberry)

Rum

Grenadine

BBQ Dry Rub

Fresh Lemon Wedge

EZ No-Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. BBQ Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Finish by mixing in 1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

EZ Quick Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Heat with 2-3oz Rum, 1-2oz  Grenadine, and 2-3 Tbsp. Blackberry Blueberry or Raspberry Jam for 10 Minutes until everything dissolves

-Finish by mixing in  1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

Homemade DIY BBQ Dry Rub

This Simple Rub is set in Tablespoons, but feel free to multiply portions or use 1/4 and 1/2 Cup measuring cups. Mix together:

2 Tbsp Granulated Garlic

2 Tbsp Granulated Paprika or Smoked Paprika

2 Tbsp Granulated or Powdered Onion

1 Tbsp Ground Allspice

1 Tbsp Ground Fennel

Optional

1 Tbsp Brown Sugar

Dear Chef Mick (@BBQ Rescues)-

I want to help other women and men detect Heart Disease and live a healthy lifestyle. With symptoms and at a (younger)age- atypical for having Heart Disease, my doctor misdiagnosed me as having Costochondritis in September, 2015. After only one year (on September 1, 2016) I had an Angiogram test that showed an 80%(!) blockage in my left anterior descending artery. I was then diagnosed with Heart Disease and had to undergo invasive surgery, with a stent put into my artery.

As a recent survivor,  my company Luvafoodie is about having a joy and passion for food and beverages. Due to my love for food and cooking, my brand is launching a new gourmet salt free spice line that will still be delicious for all Foodies to use. A low sodium diet is best for controlling Heart Disease. Too much salt can lead to high blood pressure, stroke and heart failure. Most Americans eat too much processed foods, 77% of salt comes from processed foods.

February is National Heart Awareness Month for American Heart Association. Friday, February 3rd is an important day for all men and women to wear red and help bring attention to the prevention of Women’s Heart Disease. More women die each year of heart disease than any other disease. Heart disease and stroke cause 1 in 3 deaths among women each year- approximately one woman every minute. Every 80 seconds a woman dies of heart disease or a stroke.

With that in mind here are 4 Easy Things You Can Do to Help Save Lives for February Heart Awareness Month-

1. Share a Link to this Blog, with anyone and everyone. Whether your page is about Pet Care, Auto Mechanics, or even Politics- (both Democrats and Republicans have hearts to take care of).

2. Wear Something Red on Friday, February 3rd to help spread awareness of Heart Disease.

3. Support the American Heart Association Fundraiser by Donating or Participating in a February “FUNRaiser”.

4. Try purchasing and/or preparing Lower Sodium versions of your favorite foods. There are Low Salt options of many Snacks, Soups and other Groceries you buy.

-Ask for Less Salt when ordering Eggs and Made-To-Order Dishes

-If you Cook, try adding 1/4 one quarter (or none) of your regular amount of Salt. Then you can season lightly at the end or with Salt Substitute.

GRILLED HOT BUTTER POPCORN

1 Cup White or Rainbow Popcorn Kernels

2 Tbsp Sunflower Oil

2 Tbsp Low Salt Butter

1/2 Tsp Himalayan Pink Salt (or to Taste)

2 Tbsp Luvafoodie No Salt Seasoning (of Your Choice), a Favorite BBQ Rub or Following Recipe

Supplies:

Thin Aluminum Pot w/Lid or Foil Pan

Aluminum Foil

Bowl for Mixing/Serving

Grilled Popcorn Cooking Directions

  1. Heat Gas, Charcoal or Electric Grill to Medium High
  2. Mix Popcorn and Oil in Pot (or Pan) plus Sprinkle of Pink Salt, to taste
  3. Arrange Kernel into single layer at bottom of Pan and cover tightly with sheet of Foil
  4. Secure Top of Pan with Lid or tightly cover with Foil (to hold in air and catch popping corns)
  5. Heat Pan directly over heat for 8-10 Minutes, shake when corn starts to pop
  6. Remove Pan from heat once hearing popping slow down to less than 1 per 3 seconds
  7. Make Foil Cup to melt Butter over heat (or use small Grill Safe container)
  8. Optional- Mix 2 Tsp Dry Seasoning into Butter before drizzling into Popcorn. Sprinkle reserved Seasoning and Salt to taste. Mix Well and Enjoy!

SUPERFOOD NO-SALT FIESTA TACO/CHILI SEASONING

Add this for anything (and everything) to bring Southwest or “South of Border” Flavor. Use it to Season Tacos (Beef, Chicken, Veggie, etc..), Red Beef (Chicken or Vegetarian) Chili. Make Low Fat Homemade Doritos by Baking, Pan Crisping or Grilling Tortillas, then Season. Add to Fresh Buttered Popcorn for sensational Party or Game Day Snacking.

Mix These Dry Ground or Powdered Spices:

3 Tbsp. Smoked Paprika

2 Tbsp. Onion Powder

2 Tbsp Red Bell Pepper

2 Tbsp. Garlic

2 Tbsp. Cumin

1 Tbsp. Cinnamon

*Optional For Spicy Add 1 Tsp or more Ground Red Ancho Chili or Cayenne Pepper Powder

Just so you know, the event was the Santa Monica Police Department’s 120th Anniversary “Birthday” Party. They were expecting up to 500 people! RECIPES

INGREDIENTS (For 4 Servings):

Burgers

  • 1 lb. Ground Beef
  • 2 Tbsp. HEROIC! BBQ Rub (see Homemade BBQ Rub Recipes here)
  • 1 Tbsp. Worcestershire Sauce
  • 1 Tsp. Himalayan Sea Salt (or to taste)
  • 1/2 Tsp. Fresh Ground Pepper (or to taste)

[For Vegetarian Version, Substitute 2″ Thick sliced Eggplant, and season the same way]

Buns

  • 4 Brioche Hamburger Buns; or
  • 8 Grilled Portobello Mushrooms (for ‘Shroom Burger)

 

Superfood Rubbed Potato Chips

  • 1 Bag Potato Chips
  • 2 tbsp HEROIC! Rub
  • Aluminum Foil Pan or Handmade Foil Basket

 

Watermelon “Fries”

  • 1 Watermelon (5+ lbs.)
  • Pink Himalayan Sea Salt (to taste)
  • HEROIC! Rub (optional)

 

Condiments (optional)

  • 4 Slices All Natural Cheddar Cheese
  • 8 Thin Slices Roma Tomato
  • 4 Slices Onion (Grilled Optional)
  • Iceberg Lettuce
  • Hamburger Pickles
  • Ketchup (Low Sugar/Sodium OK)
  • Mustard (Yellow or Deli)
  • BBQ Sauce (see All Natural Homemade BBQ Sauce Video Below)
  • Seasoned Mayo (1 Cup Low Fat Mayo mixed with 1 Tbsp HEROIC! Rub)

DIRECTIONS:

Preparation

  1. Heat Grill. Gas or Charcoal- may use Wood Chips/Chunks to add Smoky Flavor. Kingsford Charcoal/ Products Recommended for Reliability. See Article on How to Smoke on Any Grill.
  2. Prep Burgers. Combine all Seasonings with Ground Beef and separate into 4 Patties. May use Burger Press for more uniform shapes.
  3. Prepare Seasoned Mayo, and slice Onions, Tomatoes and Lettuce for Burgers.
  4. Cut Watermelon into 2 inch Slices and remove Rinds to make Rectangular shape. Keep Chilled.

Cooking

  1. Sear Burgers on high, move to low heat for 4-8 Minutes, depending on desired doneness. Melt Cheese for final 3 Minutes.
  2. Rub Mushrooms with Olive Oil (to prevent sticking) and Grill 3-5 Minutes/per side (depending on thickness). Do not overcook or will be too mushy.

  3. Keep Watermelon chilled until ready to use. Quickly cook 2-3 Minutes/ per side on hot part of Grill for Grill Marks, but should stay crisp. Serve Immediately.
  4. May also briefly Grill Buns for the Brioche Superfood Burger.
  5. Add desired amount of Potato Chips to aluminum pan (or homemade foil basket), Add BBQ Rub and Smoke for 8-10 Minutes (see video).

BACON! Need I say more? The Smoking Bacon & Hog Cookbook bucks the culinary tradition of the big alluring Food Photo cover. Instead, the outside sports a butcher paper theme, with a few small BBQ Pics on the back. However, the inside photos do not disappoint. They boast amazing full page images of some very creative BBQ Dishes. For Example- who would have thought of Pulled Pork Egg Rolls? Or using a “Tortilla” of weaved, Smoked Bacon on a Quesadilla?

Joined by Tim O’Keefe, main Author Bill Gillespie is regularly seen on the National circuit of BBQ Competitions. He has lead his Smokin’ Hoggz BBQ Team to loads of victories, including Championships in both the American Royal and Jack Daniels’ Invitationals. They also offer Smoking’ Hoggz BBQ Sauce for available shipping on their website. As an added personal Bonus, my all-time favorite Food Network Judge- Simon Majumdar- is quoted in the back cover.

The Smoking Bacon and Hog Cookbook is as insightful as it is indulgent. It opens with a discussion of the various breeds of Pigs, and is straight-forward and easy to read. Next, Gillespie offers his take on several types of Smokers, Wood Chunks and Charcoals. Chapters include Recipes for Curing and Smoking Homemade Bacon to Pork Sausages, Side Dishes to Ribs, and even Tips for Cooking a Whole Hog. The final section features Recipes for a nice variety of Seasoning Rubs and BBQ Sauces.

Instructions and Techniques are clear and easy to follow. The level of difficultly is mostly based on Commitment. How much time are you willing to commit to learning Barbecue? For example, the Bacon curing process can take up to 7 days. Smoking Pork Butt or Shoulder can take 12 to 14 Hours. While a 200 lb. Hog can go from 23 to 25 Hours to fully cook. Sometimes you can utilize shortcuts like store bought Bacon and Sausage while keeping the Recipes for inspiration.

Thankfully, we have been given permission to share a couple of my favorites. The Bacon Weave Quesadilla puts Chicken, Cheese and Salsa in-between two layers of Smoked Bacon (I’d suggest also adding Chopped Fresh Cilantro to take it even further over the Border). The Grilled Bacon, Banana and Peanut Butter Sandwich will have both you and (the late) Elvis “All Shook Up”.

Bacon Weave Quesadilla

What’s a Bacon Weave Quesadilla? It’s a quesadilla with bacon in place of the tortilla shell. Let me repeat that for ya: a quesadilla with bacon in place of the tortilla shell. Think about melty cheese, smoky chicken, chunky salsa and spicy jalapeños melding into the crispy bacon layer. Now let your taste buds be happy!

Serves: 4 • Cook time: approximately 15 minutes

2 Bacon Weaves (page 42), precooked

½ cup (60 g) shredded cheddar cheese

1 lb (455 g) chicken, cooked and sliced about ½ ” (1.3-cm) thick

1 cup (160 g) thinly sliced cooked onion

1 cup (150 g) thinly sliced cooked red and green peppers

½ cup (60 g) shredded Monterey Jack cheese

½ cup (120 g) queso fresco (Mexican cheese)

1 cup (240 g) chunky salsa

¼ cup (60 g) diced jalapeños

1 cup (240 g) sour cream

½ cup (50 g) sliced green onion

Lay out one of the bacon weaves and cover with cheddar cheese. Add the chicken, onion, peppers, Monterey Jack, queso fresco, salsa and jalapeños, then top with the other bacon weave.

Fire up your charcoal grill for two-zone cooking. Fill up a charcoal chimney with hardwood lump charcoal and light it. When flames start coming out of the top of the chimney, the coals are ready. Dump onto one side of the cooker. Keep the other side clear for indirect cooking.

Place the quesadilla on a piece of heavy-duty aluminum foil, and then place the foil onto the cooking grates. Cook on the indirect side of the grill for about 10–15 minutes, until the cheese is melted. You may want to spin it 180 degrees after about 5–7 minutes so it will cook evenly. Once the cheese has melted, remove from the grill and let sit for about 5 minutes.

Cut into squares and serve with the sour cream and green onions.

Bacon, Banana and Peanut Butter Sandwich

Elvis has just reentered the building. The King, whose favorite sandwich was banana and peanut butter, would be proud of this one! The crispy bacon adds a hint of crunch to the softness of the sandwich.

Serves: 4 • Cook time: 57 minutes

8 pieces thick-cut Texas Toast

1 cup (260 g) all-natural chunky peanut butter (I like Teddie brand)

½ cup (120 g) pepper jelly

4 medium bananas

16 pieces thick-cut Maple-Smoked Pork Belly (page 18), cooked

½ cup (112 g) butter, softened

Set up your charcoal grill for two-zone cooking. Fill up a charcoal chimney with hardwood lump charcoal and light it. When flames start coming out of the top of the chimney, the coals are ready. Dump onto one side of the cooker. Keep the other side clear for indirect cooking. Start heating up a cast-iron skillet.

To assemble the sandwiches, lay out 2 pieces of Texas Toast. Spread ¼ cup (65 g) of peanut butter on one side and about 2 tablespoons (30 g) of pepper jelly on the other side. Slice up 1 banana and place the slices on the peanut butter side of the sandwich. Put 4 pieces of bacon on top of the banana slices. Place the second piece of toast on top, jelly side down. Repeat for the other 3 sandwiches. Spread 1 tablespoon(14 g) of softened butter on each side of the sandwiches.

Place a sandwich in the cast-iron skillet. Cook for about 3 minutes, or until it is a nice golden-brown color. Flip over and do the same for the other side. Depending on the size of your pan, you may be able to cook 2 sandwiches at one time.

When the sandwiches are cooked, cut each in half on the diagonal and serve with a nice glass of ice cold milk!
