Very First Time I tried to experriment with Quicki Lowfat Ribs Recipe, this is how the Skewers looked.

I have to give credit for this Recipe’s inspiration to two recent Private Grilling Clients. One in Pasadena- Greg (A Disney Sr. VP of Finance)- was the first to ever convince me teach him my Secrets to Ribs. As part of our Lesson we went shopping and picked up a rack of Ribs for him to marinate overnight, and then smoke the next Day. As an experiment, we also bought a small Pork Loin to see if giving it the same seasoning and smoking the Strips quickly would actually taste like real Ribs.

The first Marinade we tried for easier and leaner BBQ Ribs included Worcestershire Sauce, and a blend of Dry BBQ Rubs.

We followed the Recipe below, and they came out tasting so good, that Greg wondered aloud why we go through so much trouble with Full Racks. We served the RibLets  poolside to his Family and they quickly disappeared.

On the very first try, we decided to serve RibLet Bites, with BBQ and Jalapeno Hot Sauce as dipping Sauces. Fish dish was for fun nod to Client’s Family’s day at Pool.

The next time I made the Recipe was a fluke. I was doing a second Grilling Lesson with Blake Mycoskie (of Tom’s Shoes and Toms Foundation) in his famous Malibu Treehouse Estate. The original plan was to make Beef Ribs on his new Smoker, but while shopping, they were nowhere to be found. Instead, I offered to show him this new Quick Pork Ribs Recipe, and see it if would remind him of Bone-In Ribs. We served them to his wife and son. Once again, they couldn’t believe that the taste rivaled Slow Cooked Ribs.

The second time the Recipe was cooked by client Blake Mycoskie (Founder of Tom’s Shoes). They were extra lean and we put Skewers through center for even Smoking.

In June I finally had the courage to try the Boneless Ribs recipe at a Sample Tasting for the high powered Board of one of Hollywood’s top Celebrity Financial Consulting Companies. They raved about the Ribs, but chose a different Caterer this time around. However, their reaction gave me the confidence to to try making them for a bigger group.

Quick Low-Fat Boneless Smoked BBQ Ribs

INGREDIENTS:

  • Marbled Boneless Pork Roast (Can be Shoulder, Roast, etc. Loin may be too lean)
  • BBQ Dry Rub
  • BBQ Sauce
  • Worchestershire Sauce
  • Salt and Pepper (to taste)
  • Wooden or Metal Skewers
  • Aluminum Foil
  • Hickory Wood Chips or Chunks (depending on your Grill)
  • Basting Brush

INSTRUCTIONS:

  1. Slice Pork into 1 1/2- 2″ Inch Strips (cut against grain as much as possible.
  2. Marinate Pork in Dry Rub, Worcestershire Sauce and Salt/Pepper to taste
  3. Carefully Skewer through Center of Meat as much as Possible, co it stays in Contact on Grill.
  4. Place Ribs 2″ Inches apart on Sheet of Foil (roll up edges to hold juice)
  5. Set up your Grill for Indirect Smoking using right technique fir Grill (link)
  6. Smoke Ribs in Low Heat for 20 Minutes, flipping halfway through to get Smoke on both sides.
  7. Baste in Foil with BBQ Sauce on both Sides, then quickly char each side on hot side of Grill to sear in juices.
  8. If using Wooden Skewers, you makerwant to trim off ends for a more Finger licking Rib Experience.

Grilled Vegetarian Gumbo (Serves 8)

Catering or Hosting a Big Party? It is better to start with a pot of Well-Seasoned, Mild, Vegetarian Gumbo. It can be perfectly delicious served with Diced Grilled Vegetables. Then split into a second pot to add Smoky Grilled Shrimp, Crawfish, Chicken, and/or Andouille (or Mild) Sausage. Another option is add Meats, and Spicy Hot Sauce to individual Servings. Be mindful of any Guests who may want to avoid Shellfish, Pork or Hot Spicy foods.

Ingredients:

8- Variety Yellow, Red and Orange Bell Peppers

3- Bell Green Peppers

1- Bunch Celery

4- Large Carrots

2- White Onions

2- Cups Urban Press Petite Wine

1- 16 Oz. Can Stewed Tomatoes

1- Cup Chopped Garlic

1/2 Cup- Chopped Green Onions

1/2 Cup- Chopped Fresh Parsley and/or Rosemary

4 Tbsp- Superfood BBQ Rub or Seasoning

2 Tbsp- Browning and Seasoning Liquid

2 Tbsp. File Powder

4 Cups Vegetarian or Onion Broth

2 Tbsp. Louisiana Cayenne Hot Sauce (optional, to taste)

Salt/Pepper to taste

Preparation:

1. Season, Marinate and Smoke Peppers, Celery, Carrots and Onions for at least an hour. Reserve 1/2 for Puree, Dice 1/2 for soup and cover with 3 Cups Vegetable Broth, simmer slowly.

2. Pan Roast Chopped Garlic, heat with Wine and remaining Veggies. Puree until smooth and combine with 1 Cup Broth to make Smooth. Add to pot with Stewed Tomatoes. Season well with BBQ Seasoning, Browning and Seasoning Liquid, File Powder, Salt, Pepper and Hot Sauce to taste.

3. Reserve Green Onions and Parsley for Garnish.

Fresh Berry BBQ Sauce Recipes

For Easy (EZ) Quick Start Recipe, Chef Randy starts with McClard’s BBQ Sauce and uses Blackberries. You have option of using your favorite Red BBQ Sauce or make Homemade All Natural BBQ Sauce. There is also a Quick Sauce you can make by mixing BBQ Dry Rub with any Ketchup you may have in the Pantry.

INGREDIENTS LIST (OPTIONS)

Prepared Red BBQ Sauce

Prepared Ketchup (May by Organic, Low Salt, etc…)

Fresh Berries (Blackberries, Blueberries or Raspberries)

Berry Jam (Blackberry, Blueberry, Cranberry or Raspberry)

Rum

Grenadine

BBQ Dry Rub

Fresh Lemon Wedge

EZ No-Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. BBQ Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Finish by mixing in 1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

EZ Quick Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Heat with 2-3oz Rum, 1-2oz  Grenadine, and 2-3 Tbsp. Blackberry Blueberry or Raspberry Jam for 10 Minutes until everything dissolves

-Finish by mixing in  1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

Homemade DIY BBQ Dry Rub

This Simple Rub is set in Tablespoons, but feel free to multiply portions or use 1/4 and 1/2 Cup measuring cups. Mix together:

2 Tbsp Granulated Garlic

2 Tbsp Granulated Paprika or Smoked Paprika

2 Tbsp Granulated or Powdered Onion

1 Tbsp Ground Allspice

1 Tbsp Ground Fennel

Optional

1 Tbsp Brown Sugar

1/2 Tbsp Salt

I want to help other women and men detect Heart Disease and live a healthy lifestyle. With symptoms and at a (younger)age- atypical for having Heart Disease, my doctor misdiagnosed me as having Costochondritis in September, 2015. After only one year (on September 1, 2016) I had an Angiogram test that showed an 80%(!) blockage in my left anterior descending artery. I was then diagnosed with Heart Disease and had to undergo invasive surgery, with a stent put into my artery.

As a recent survivor,  my company Luvafoodie is about having a joy and passion for food and beverages. Due to my love for food and cooking, my brand is launching a new gourmet salt free spice line that will still be delicious for all Foodies to use. Bowl for Mixing/Serving

Grilled Popcorn Cooking Directions

  1. Heat Gas, Charcoal or Electric Grill to Medium High
  2. Mix Popcorn and Oil in Pot (or Pan) plus Sprinkle of Pink Salt, to taste
  3. Arrange Kernel into single layer at bottom of Pan and cover tightly with sheet of Foil
  4. Secure Top of Pan with Lid or tightly cover with Foil (to hold in air and catch popping corns)
  5. Heat Pan directly over heat for 8-10 Minutes, shake when corn starts to pop
  6. Remove Pan from heat once hearing popping slow down to less than 1 per 3 seconds
  7. Make Foil Cup to melt Butter over heat (or use small Grill Safe container)
  8. Optional- Mix 2 Tsp Dry Seasoning into Butter before drizzling into Popcorn. Sprinkle reserved Seasoning and Salt to taste. Mix Well and Enjoy!

SUPERFOOD NO-SALT FIESTA TACO/CHILI SEASONING

Add this for anything (and everything) to bring Southwest or “South of Border” Flavor. Use it to Season Tacos (Beef, Chicken, Veggie, etc..), Red Beef (Chicken or Vegetarian) Chili. Make Low Fat Homemade Doritos by Baking, Pan Crisping or Grilling Tortillas, then Season. Add to Fresh Buttered Popcorn for sensational Party or Game Day Snacking.

Mix These Dry Ground or Powdered Spices:

3 Tbsp. Smoked Paprika

2 Tbsp. Onion Powder

2 Tbsp Red Bell Pepper

2 Tbsp. Garlic

2 Tbsp. Cumin

1 Tbsp. Cinnamon

*Optional For Spicy Add 1 Tsp or more Ground Red Ancho Chili or Cayenne Pepper Powder

**If you wish to add Sodium Finish by sprinkling small amount of Himalayan Pink or Salt Substitute right before Serving

You can make juicy and delicious Burgers at home for a fraction of the price. Most importantly, you’ll really get to “Have it your way.”  For parties, it is even better nowadays to allow Guests choices for the Paleo Diet, Vegetarian and Gluten Free options, as well as fluffy Brioche buns. Some creative additions of Fruits and Vegetables to the Menu will be appreciated by Diabetics and others who are trying to eat healthier. These were inspired by a big event I catered for the Employees of the Santa Monica Police Department. So Labor Day is the perfect time to share them.

Just so you know, the event was the Santa Monica Police Department’s 120th Anniversary “Birthday” Party. They were expecting up to 500 people! Fortunately, Kingsford contributed plenty of bags of Professional Charcoal. The Pit Barrel Cooker Co. pitched in new Grills for us to use (plus extras to give the Police Dept.). Many of the Celebrants were into fitness, and had their Hot Links, Burgers and/or Chicken Breast “Sandwiches” without the buns.  I also learned from the Vegetarian and Gluten Free Guests that they prefer to eat All Natural and don’t want to settle for the engineered Soy based Meat and Dairy substitutes.

RECIPES

INGREDIENTS (For 4 Servings):

Burgers

  • 1 lb. Ground Beef
  • 2 Tbsp. HEROIC! BBQ Rub (see Homemade BBQ Rub Recipes here)
  • 1 Tbsp. Worcestershire Sauce
  • 1 Tsp. Himalayan Sea Salt (or to taste)
  • 1/2 Tsp. Fresh Ground Pepper (or to taste)

[For Vegetarian Version, Substitute 2″ Thick sliced Eggplant, and season the same way]

Buns

  • 4 Brioche Hamburger Buns; or
  • 8 Grilled Portobello Mushrooms (for ‘Shroom Burger)

 

Superfood Rubbed Potato Chips

  • 1 Bag Potato Chips
  • 2 tbsp HEROIC! Rub
  • Aluminum Foil Pan or Handmade Foil Basket

 

Watermelon “Fries”

  • 1 Watermelon (5+ lbs.)
  • Pink Himalayan Sea Salt (to taste)
  • HEROIC! Rub (optional)

 

Condiments (optional)

  • 4 Slices All Natural Cheddar Cheese
  • 8 Thin Slices Roma Tomato
  • 4 Slices Onion (Grilled Optional)
  • Iceberg Lettuce
  • Hamburger Pickles
  • Ketchup (Low Sugar/Sodium OK)
  • Mustard (Yellow or Deli)
  • BBQ Sauce (see All Natural Homemade BBQ Sauce Video Below)
  • Seasoned Mayo (1 Cup Low Fat Mayo mixed with 1 Tbsp HEROIC! Rub)

DIRECTIONS:

Preparation

  1. Heat Grill. Gas or Charcoal- may use Wood Chips/Chunks to add Smoky Flavor. Kingsford Charcoal/ Products Recommended for Reliability. See Article on How to Smoke on Any Grill.
  2. Prep Burgers. Combine all Seasonings with Ground Beef and separate into 4 Patties. May use Burger Press for more uniform shapes.
  3. Prepare Seasoned Mayo, and slice Onions, Tomatoes and Lettuce for Burgers.
  4. Cut Watermelon into 2 inch Slices and remove Rinds to make Rectangular shape. Keep Chilled.

Cooking

  1. Sear Burgers on high, move to low heat for 4-8 Minutes, depending on desired doneness. Melt Cheese for final 3 Minutes.
  2. Rub Mushrooms with Olive Oil (to prevent sticking) and Grill 3-5 Minutes/per side (depending on thickness). Do not overcook or will be too mushy.

  3. Keep Watermelon chilled until ready to use. Quickly cook 2-3 Minutes/ per side on hot part of Grill for Grill Marks, but should stay crisp. Serve Immediately.
  4. May also briefly Grill Buns for the Brioche Superfood Burger.
  5. Add desired amount of Potato Chips to aluminum pan (or homemade foil basket), Add BBQ Rub and Smoke for 8-10 Minutes (see video).
