On June 10, 2018, I was honored to be invited to the 26th Annual Breakfast Meeting at Congregation Bais Naftoli in Los Angeles. Along with Congregation President, the event was attended by high ranking city, county and federal officials. Was a true pleasure to meet Andrew Friedman, President of Congregation Bais Naftoli in Los Angeles.

For the Breakfast, they served delicious Scrambled Eggs, Lox Salmon, Smoked Whitefish, Banana Blintzes, as well as was an abundances of Salad, Bagels, Cream Cheese and Fresh Fruits (& Veggies). My favorite was chomping on the Blueberries that were refreshing and in season, among other dishes.

After the Breakfast, I attended to a meeting at the West Los Angeles Farmer’s Market. Upon leaving, I couldn’t resist the unmistakable aroma of smoking BBQ.  Venturing a bit further down Santa Monica Bl., was surprised to stumble upon my first ever Kosher Street BBQ at Santa Monica Kosher Market. A Coincidence? After having just prepared flyers on the subject? Who knows… Will say I was impressed to not have to request Fresh Veggies from the Grill. They already had me covered.

TIPS: How to incorporate BBQ and more Nutrition for your Home Kosher Dishes:

Matzo ball Soup– Try wood smoking Chicken for the Broth. Grill the Carrots, Celery and even the Matzo Balls before adding with Herbs to broth.
Kosher Vegan Soup Broth and Gluten Free Matzo Balls are available online and at selected Kosher Grocery Stores.
Smoked Salmon– Home Smoked Salmon contains up to 80% less sodium than most store bought cured salmon.
Smoked Brisket– Rather than the oven, try cooking your Brisket on the Grill to add nice smoky flavor.
Pastrami- Yes pastrami! Try grilling or smoking it at home to cut down on the heavily salty and sugared brines used in store brands and certain Deli’s.
Smoked Whitefish- Is much easier to smoke at home than you may think.

Texas BBQ Goes Vegan! (Well, Kinda Sorta)- Introducing #BBQProject2020– a new Initiative for All #BBQ #Restaurants to offer #Fresh #Veggies  from the #Grill by year #2020. This Video shot at Brown B Que Restaurant in Austin, Texas shows how it can be done. Special Thanks to Thurman, Claudia and Kenneth Brown (Long Lost Cousins).

RECIPE- Smoked Vegan BBQ Baked Potato

(1 Entree, Appetizer or Side Dish)

Vegan BBQ! Smoked Veggie Baked Potato Recipe created for Brown B Que in San Antonio, TX with a little help from BBQ RESCUES!

Ingredients

1 Baked Potato

1 Onion (cut in half)

1 Tomato (cut in half)

4 Springs of Green Onion

BBQ Rub

Olive Oil

BBQ Sauce

 

Preparation

  1. Cut Veggies, marinate in Olive Oil and your favorite BBQ Rub (BBQ RESCUES! Rub Recipes) 
  2. Smoke Veggies on Hickey, Mesquite or (your favorite) Wood Smoker for 15-30 Minutes.
  3. Remove Veggies from Smoker. Chop into 1″ portions. Season Potato with BBQ Rub, add Chopped Veggies on top. Finish with a drizzle of BBQ Sauce and final dusting of Rub.
  4. Enjoy

Plus a Grilled Vegetable Dirty Wild Rice recipe you can make on the Grill. On the downside, smoked salmon delivers a hefty dose of sodium. Three ounces of smoked salmon, for example, contains 666 milligrams of sodium, more than one third of a day’s worth. The same serving size of cooked fresh salmon has 50 milligrams.- The Globe and Mail

RECIPE

Ingredients:

1.5 lb Fresh Sockeye Salmon

Soft Butter (or Butter Substitute)

Fresh Dill

Fresh Basil

Salt-Free Spice Rub (We used Ginger Lime Blend by Luvafoodie)

2 (ea) Red and Yellow Bell Peppers

1 lb Fresh Asparagus

1 Large Lemon

Instant Wild Rice Mix

Seafood Broth

Heart Shaped or Round Ramekin (optional)

Charcoal, Mesquite Logs, Hickory Wood Chunks

Preparation:

  1. Set Grill for Indirect Smoking by lighting Charcoal and Mesquite on one side. Soak 3-4 Large Wood Chunks in Water
  2. Rub Salmon on Foil with 2-3 Tbsp. Butter, Chopped Dill, Chopped Basil, Spice Rub and 4 Slices of Fresh Lemon
  3. Slice Bell Peppers in half and season with same mixture above
  4. One Grill is ready put Wood Chunks on Charcoal, set grate, place Salmon on side opposite fire for Indirect Smoking. Place Bell Peppers directly over Hot Side to grill for 10 Minutes (flipping once)
  5. Season cleaned Asparagus with Butter, Herb, Spice Mixture and set aside.
  6. Remove cooked Bell Peppers from Grill. Chop into 1″ inch dice, add to small Sauce Pot along with 6 oz. Instant Wild Rice, 2 Cups Hot Seafood Stock and 2 Tbsp Spice Rub. Mix well and cover. [Reserve 1/4 Cup Chopped Red Peppers for final Garnish]
  7. Place Rice Pot and Asparagus on hot side of Grill. Flip and remove Asparagus in 10 Minutes. Allow Rice to cook 20 Minutes (or until soft), then remove from Grill.
  8. Also remove Salmon once it has Smoked about 1 Hour indirectly on Grill.
  9. Place Rice in Buttered Ramekin for presentation. Serve with 4oz. Smoked Salmon (with Lemon), place 6-8 Grilled Asparagus per plate. Finish with final Sprinkling of Spice Rub and Chopped Red Bell Peppers (for color).
  10. Enjoy. Happy Valentine’s Day!
