Game Day Smoked Buffalo Chicken and Veggie Bites

(12-20 Appetizer Servings)

1 lb Boneless Chicken Breasts

1 lb Boneless Chicken Thighs

1lb Jumbo Carrots

6 Stalks Celery

4 Delicious Red Apples

4 Oranges

1/2 Cup BBQ Rub or Spice Blend

6 oz. Worcestershire sauce

1 Cup Lowfat Blue Cheese Dressing

1 Cup BBQ Sauce (Low Fat, Vegetarian preferred)

1 Cup Frank’s Hot Sauce

4 Tbsp Butter (Lactose Free, Vegan preferred)

3 Tsp Sugar Substitue (Splenda, Agave, Honey, Monk Fruit or your preferred Sweetener)

Hickory or Mesquite Wood Chunks (charcoal) or Chips (gas grill)

Spring Mix or Your Choice of Fresh Greens for Garnish (or Salad option)

1. If you are expecting Vegans, better to prepare Vegetables separately on Grill and keep warm before cooking Chicken.

2. Prepare Grill for Indirect Smoking by heating one Half to High (Gas or Charcoal). Soak Wood Chunks or Chips.

VEGETABLE PREP

3. Skin Carrots, Devein Celery, cut in Half lengthwise to lay flatter on Grill

4. Chop Apples in Half and sprinkle with Lemon Juice

5. Combine All in Plastic Bag (or in Bowl). Mix in 2 oz Worcestershire Sauce and 2 Tbsp. BBQ Dry Rub or Seasoning. Mix well and Smoke on Indirect side of Grill, after adding Wood Chunks or Chips for 15 Minutes, flipping once.

CHICKEN PREP

6. Butterfly Chicken Breasts. Combine with whole Boneless Thighs in Plastic Bag or Bowl

7. Season with 4 oz. Worcestershire Sauce and 4 Tbsp BBQ Dry Rub or Seasoning

8. Smoke Chicken on Indirect Side of Grill for 30-40 Munites, replacing Wood Chunks or Chips as needed

9. Grill Halved Oranges, springing some juice on Chicken towards end of cooking

BUFFALO SAUCE

10. Place Grill-Safe Pan on Hot side of Grill. Add Franks Hot Sauce, Butter and Sugar Substitute. Mix Well and Cover.

11. Once warm (about 10 Minutes), Stir and remove Sauce Pan from Grill.

12. Move Chicken to Hot side of Grill, flipping to finish (about 10 Minutes)

SERVING

13. Line bottom of Platter with Sping Mix or your Choice of Herbs or Lettuce (for Salad Option

14. Pour Blue Cheese Dressing, Buffalo and BBQ Sauce Bowls, and place in Center of Platter for Dipping [May make separate Bowls for strict Vegans (and use Vegan substitute Ranch or Blue Cheese Dressing.]

15. Core Apples and Cut into Quarters. Slice Carrot and Celery in Half or Thirds for hearty  Bites. Place on One Side of Platter

16. Slice Grilled Chicken into thick Strips and serve on other side of Platter.

17. Finish with a final Sprinkling of BBQ Rub or Seasoning.

18. ENJOY!

OVEN DIRECTIONS

  1. Preheat Oven to 4:40 Degrees.
  2. Season and Marinate Veggies and Apples as above, but cut into Sticks and Quarters before placing oiled Baking Pan. Spray more Cooking Oil on top for crisper results
  3. Cut Chicken Breasts and Thighs into bite sized pieces before Marinating. Cook on oiled Grill Pan (if available)
  4. Buffalo Sauce Recipe prepared on Stove Top
  5. Cook Veggies for about 15 Minutes, flipping once. Chicken should cook for about 40 Minutes, flipping until browned.

Fresh Berry BBQ Sauce Recipes

For Easy (EZ) Quick Start Recipe, Chef Randy starts with McClard’s BBQ Sauce and uses Blackberries. You have option of using your favorite Red BBQ Sauce or make Homemade All Natural BBQ Sauce. There is also a Quick Sauce you can make by mixing BBQ Dry Rub with any Ketchup you may have in the Pantry.

INGREDIENTS LIST (OPTIONS)

Prepared Red BBQ Sauce

Prepared Ketchup (May by Organic, Low Salt, etc…)

Fresh Berries (Blackberries, Blueberries or Raspberries)

Berry Jam (Blackberry, Blueberry, Cranberry or Raspberry)

Rum

Grenadine

BBQ Dry Rub

Fresh Lemon Wedge

EZ No-Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. BBQ Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Finish by mixing in 1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

EZ Quick Cook Berry BBQ Sauce

-Mix 2 Cups of Red BBQ sauce or Ketchup with 2-3 Tbsp. Dry Rub

-Smash 1/4 Cup Fresh Berries to release Juice and Mix into Sauce

-Heat with 2-3oz Rum, 1-2oz  Grenadine, and 2-3 Tbsp. Blackberry Blueberry or Raspberry Jam for 10 Minutes until everything dissolves

-Finish by mixing in  1/4 Cup Whole Fresh Berries and squeeze of Fresh Lemon

Homemade DIY BBQ Dry Rub

This Simple Rub is set in Tablespoons, but feel free to multiply portions or use 1/4 and 1/2 Cup measuring cups. Mix together:

2 Tbsp Granulated Garlic

2 Tbsp Granulated Paprika or Smoked Paprika

2 Tbsp Granulated or Powdered Onion

1 Tbsp Ground Allspice

1 Tbsp Ground Fennel

Optional

1 Tbsp Brown Sugar

1/2 Tbsp Salt

1/3 Tbsp Fresh Ground Pepper

Dear Chef Mick (@BBQ Rescues)-

I want to help other women and men detect Heart Disease and live a healthy lifestyle. With symptoms and at a (younger)age- atypical for having Heart Disease, my doctor misdiagnosed me as having Costochondritis in September, 2015. After only one year (on September 1, 2016) I had an Angiogram test that showed an 80%(!) blockage in my left anterior descending artery. I was then diagnosed with Heart Disease and had to undergo invasive surgery, with a stent put into my artery.

As a recent survivor,  my company Luvafoodie is about having a joy and passion for food and beverages. Due to my love for food and cooking, my brand is launching a new gourmet salt free spice line that will still be delicious for all Foodies to use. A low sodium diet is best for controlling Heart Disease. Too much salt can lead to high blood pressure, stroke and heart failure. Most Americans eat too much processed foods, 77% of salt comes from processed foods.

February is National Heart Awareness Month for American Heart Association. Friday, February 3rd is an important day for all men and women to wear red and help bring attention to the prevention of Women’s Heart Disease. More women die each year of heart disease than any other disease. Heart disease and stroke cause 1 in 3 deaths among women each year- approximately one woman every minute. Every 80 seconds a woman dies of heart disease or a stroke.

With that in mind here are 4 Easy Things You Can Do to Help Save Lives for February Heart Awareness Month-

1. Share a Link to this Blog, with anyone and everyone. Whether your page is about Pet Care, Auto Mechanics, or even Politics- (both Democrats and Republicans have hearts to take care of).

2. Wear Something Red on Friday, February 3rd to help spread awareness of Heart Disease.

3. Support the American Heart Association Fundraiser by Donating or Participating in a February “FUNRaiser”.

4. Try purchasing and/or preparing Lower Sodium versions of your favorite foods. There are Low Salt options of many Snacks, Soups and other Groceries you buy.

-Ask for Less Salt when ordering Eggs and Made-To-Order Dishes

-If you Cook, try adding 1/4 one quarter (or none) of your regular amount of Salt. Then you can season lightly at the end or with Salt Substitute.

GRILLED HOT BUTTER POPCORN

1 Cup White or Rainbow Popcorn Kernels

2 Tbsp Sunflower Oil

2 Tbsp Low Salt Butter

1/2 Tsp Himalayan Pink Salt (or to Taste)

2 Tbsp Luvafoodie No Salt Seasoning (of Your Choice), a Favorite BBQ Rub or Following Recipe

Supplies:

Thin Aluminum Pot w/Lid or Foil Pan

Aluminum Foil

Bowl for Mixing/Serving

Grilled Popcorn Cooking Directions

  1. Heat Gas, Charcoal or Electric Grill to Medium High
  2. Mix Popcorn and Oil in Pot (or Pan) plus Sprinkle of Pink Salt, to taste
  3. Arrange Kernel into single layer at bottom of Pan and cover tightly with sheet of Foil
  4. Secure Top of Pan with Lid or tightly cover with Foil (to hold in air and catch popping corns)
  5. Heat Pan directly over heat for 8-10 Minutes, shake when corn starts to pop
  6. Remove Pan from heat once hearing popping slow down to less than 1 per 3 seconds
  7. Make Foil Cup to melt Butter over heat (or use small Grill Safe container)
  8. Optional- Mix 2 Tsp Dry Seasoning into Butter before drizzling into Popcorn. Sprinkle reserved Seasoning and Salt to taste. Mix Well and Enjoy!

Grilled Steak Butter Lettuce Wraps. Marinate Steak and season Veggies with Fiesta Taco Blend.

SUPERFOOD NO-SALT FIESTA TACO/CHILI SEASONING

Add this for anything (and everything) to bring Southwest or “South of Border” Flavor. Use it to Season Tacos (Beef, Chicken, Veggie, etc..), Red Beef (Chicken or Vegetarian) Chili. Make Low Fat Homemade Doritos by Baking, Pan Crisping or Grilling Tortillas, then Season. Add to Fresh Buttered Popcorn for sensational Party or Game Day Snacking.

Mix These Dry Ground or Powdered Spices:

3 Tbsp. Smoked Paprika

2 Tbsp. Onion Powder

2 Tbsp Red Bell Pepper

2 Tbsp. Garlic

2 Tbsp. Cumin

1 Tbsp. Cinnamon

*Optional For Spicy Add 1 Tsp or more Ground Red Ancho Chili or Cayenne Pepper Powder

**If you wish to add Sodium Finish by sprinkling small amount of Himalayan Pink or Salt Substitute right before Serving
