Game Day Smoked Buffalo Chicken and Veggie Bites

(12-20 Appetizer Servings)

1 lb Boneless Chicken Breasts

1 lb Boneless Chicken Thighs

1lb Jumbo Carrots

6 Stalks Celery

4 Delicious Red Apples

4 Oranges

1/2 Cup BBQ Rub or Spice Blend

6 oz. Worcestershire sauce

1 Cup Lowfat Blue Cheese Dressing

1 Cup BBQ Sauce (Low Fat, Vegetarian preferred)

1 Cup Frank’s Hot Sauce

4 Tbsp Butter (Lactose Free, Vegan preferred)

3 Tsp Sugar Substitue (Splenda, Agave, Honey, Monk Fruit or your preferred Sweetener)

Hickory or Mesquite Wood Chunks (charcoal) or Chips (gas grill)

Spring Mix or Your Choice of Fresh Greens for Garnish (or Salad option)

1. If you are expecting Vegans, better to prepare Vegetables separately on Grill and keep warm before cooking Chicken.

2. Prepare Grill for Indirect Smoking by heating one Half to High (Gas or Charcoal). Soak Wood Chunks or Chips.

VEGETABLE PREP

3. Skin Carrots, Devein Celery, cut in Half lengthwise to lay flatter on Grill

4. Chop Apples in Half and sprinkle with Lemon Juice

5. Combine All in Plastic Bag (or in Bowl). Mix in 2 oz Worcestershire Sauce and 2 Tbsp. BBQ Dry Rub or Seasoning. Mix well and Smoke on Indirect side of Grill, after adding Wood Chunks or Chips for 15 Minutes, flipping once.

CHICKEN PREP

6. Butterfly Chicken Breasts. Combine with whole Boneless Thighs in Plastic Bag or Bowl

7. Season with 4 oz. Worcestershire Sauce and 4 Tbsp BBQ Dry Rub or Seasoning

8. Smoke Chicken on Indirect Side of Grill for 30-40 Munites, replacing Wood Chunks or Chips as needed

9. Grill Halved Oranges, springing some juice on Chicken towards end of cooking

BUFFALO SAUCE

10. Place Grill-Safe Pan on Hot side of Grill. Add Franks Hot Sauce, Butter and Sugar Substitute. Mix Well and Cover.

11. Once warm (about 10 Minutes), Stir and remove Sauce Pan from Grill.

12. Move Chicken to Hot side of Grill, flipping to finish (about 10 Minutes)

SERVING

13. Line bottom of Platter with Sping Mix or your Choice of Herbs or Lettuce (for Salad Option

14. Pour Blue Cheese Dressing, Buffalo and BBQ Sauce Bowls, and place in Center of Platter for Dipping [May make separate Bowls for strict Vegans (and use Vegan substitute Ranch or Blue Cheese Dressing.]

15. Core Apples and Cut into Quarters. Slice Carrot and Celery in Half or Thirds for hearty  Bites. Place on One Side of Platter

16. Slice Grilled Chicken into thick Strips and serve on other side of Platter.

17. Finish with a final Sprinkling of BBQ Rub or Seasoning.

18. ENJOY!

OVEN DIRECTIONS

  1. Preheat Oven to 4:40 Degrees.
  2. Season and Marinate Veggies and Apples as above, but cut into Sticks and Quarters before placing oiled Baking Pan. Spray more Cooking Oil on top for crisper results
  3. Cut Chicken Breasts and Thighs into bite sized pieces before Marinating. Cook on oiled Grill Pan (if available)
  4. Buffalo Sauce Recipe prepared on Stove Top
  5. Cook Veggies for about 15 Minutes, flipping once. Chicken should cook for about 40 Minutes, flipping until browned.

Grilled Vegetarian Gumbo (Serves 8)

Catering or Hosting a Big Party? It is better to start with a pot of Well-Seasoned, Mild, Vegetarian Gumbo. It can be perfectly delicious served with Diced Grilled Vegetables. Then split into a second pot to add Smoky Grilled Shrimp, Crawfish, Chicken, and/or Andouille (or Mild) Sausage. Another option is add Meats, and Spicy Hot Sauce to individual Servings. Be mindful of any Guests who may want to avoid Shellfish, Pork or Hot Spicy foods.

Ingredients:

8- Variety Yellow, Red and Orange Bell Peppers

3- Bell Green Peppers

1- Bunch Celery

4- Large Carrots

2- White Onions

2- Cups Urban Press Petite Wine

1- 16 Oz. Can Stewed Tomatoes

1- Cup Chopped Garlic

1/2 Cup- Chopped Green Onions

1/2 Cup- Chopped Fresh Parsley and/or Rosemary

4 Tbsp- Superfood BBQ Rub or Seasoning

2 Tbsp- Browning and Seasoning Liquid

2 Tbsp. File Powder

4 Cups Vegetarian or Onion Broth

2 Tbsp. Louisiana Cayenne Hot Sauce (optional, to taste)

Salt/Pepper to taste

Preparation:

1. Season, Marinate and Smoke Peppers, Celery, Carrots and Onions for at least an hour. Reserve 1/2 for Puree, Dice 1/2 for soup and cover with 3 Cups Vegetable Broth, simmer slowly.

2. Pan Roast Chopped Garlic, heat with Wine and remaining Veggies. Puree until smooth and combine with 1 Cup Broth to make Smooth. Add to pot with Stewed Tomatoes. Season well with BBQ Seasoning, Browning and Seasoning Liquid, File Powder, Salt, Pepper and Hot Sauce to taste.

3. Reserve Green Onions and Parsley for Garnish.

LOS ANGELES- If you tune in to this week’s Season Finale of Bravo TV’s hit show Vanderpump Rules – “When Push Comes to Shove”- you’ll witness the big Engagement Party (“Of the Year”) for Katie Maloney and Tom Schwartz. The event is held at Villa Rosa, the mansion owned by Housewives of Beverly Hills star Lisa Vanderpump and her husband Ken. The episode includes beautiful people, exciting drama and- oh yeah- Barbecue.  By now you may have guessed, my crew-Tastee BQ Grilling Co.- was honored to be invited to cater the big event.

Why us? I’d like to think of it as a reward for my many years of blogging Healthier BBQ Recipes online. Or because of the perfect 5-Star Yelp reviews from our exclusive group of clients? Most likely, it was a result of my recent win as Grill Master Champion of Cutthroat Kitchen on Food Network. In the Vanderpump Rules episode, most of the action takes place after the BBQ Lunch, but some of the Food is featured during montages. The staff and I are briefly seen Grilling, and my voice can be heard in one Clip describing Grilled Asparagus with Balsamic Reduction.

 Even if your  home doesn’t happen to be on top of Beverly Hills,  you can still use these ideas for your Backyard  BBQ’s this upcoming Summer. Here are 5 Tips for Delicious and Healthy Backyard BBQ Dishes:

1. Smoked Multicolor Tortilla Chips with Green and Red Grilled Salsas- Red, Green and Blue Tortilla Chips are sprinkled with a Low Salt/Sugar BBQ Rub and smoked with Hickory on Indirect Heat for 8-10 minutes. Serve in separate bowls or in colorful sections on a large platter. Add Grilled Onions to the Red Salsa, Grilled Tomatillos to the Green Salsa and Fresh Chopped Cilantro to both.

2. Caprese Salad Skewers- To cut the Calories, us Part Skim Mozzarella, cut the Cheese Cubes smaller (1/2’’ inch), and put at least 2 Cherry Tomatoes and 1 Fresh Basil Leaf and on each Skewer. If you have time, smoke the Skewers on Foil for a minute before passing them warm to your Guests. Finish with a drizzle of BBQ seasoned Balsamic Vinegar Reduction.

3. Southwest BBQ Pinto, Garbanzo and Black Beans w/ Chopped Grilled Veggies- Use low fat Canned Beans and add Cumin, Cilantro and Chili or Taco Seasonings (or a Mix). Also add dashes of BBQ Rub and Sauce, to taste. Make it even Healthier with Chopped Grilled Red, Green and Yellow Bell Peppers and Onions in the pot.

4. Grilled Asparagus with Balsamic Reduction-  It isn’t easy being Green. Toss Asparagus in your favorite combination of Olive Oil and Herbs, or use BBQ Rub and rotate while grilling for 5-8 minutes.There is nothing like tasting fresh Asparagus  from a Smoky Grill with a drizzle of Garlic Balsamic Vinegar Reduction.

5. Smoked BBQ Chicken Breasts, Sliced with Citrus BBQ Sauce on Side- Use your favorite marinade and smoke Chicken on Indirect heat. Note the Calories and Sugar content before purchasing BBQ Sauce, as most claim a serving is only 2 Tablespoons. Who are they kidding? Lighten it up by heating and mixing the sauce with up to 1 cup of Orange Juice and (skin-on) Wedges of Fresh Lemons and Oranges.

As an alternative to Slices, serve juicy Pulled Smoked Chicken Breasts so Guests have the option to choose various sizes for adding to Chili, on top of Salad or making Smoked Chicken Sliders with Ranch and BBQ Sauces on the side.

Sorry I don’t have any backstage “dirt” to spill about the event or any of the participants. The cast of Vanderpump Rules were very friendly and gracious to me (and the staff)- in between the fights seen on the Show. Especially Hosts Katie and Tom- they were a total delight and I wish them the very best as they pursue a (hopefully) long and happy marriage together. Tom even mentioned that they are looking for someone to cater their upcoming Wedding…
