How to Host a BBQ Food Fundraiser

Did you know that a small portion of the cash that you spend every week on Fast Food could make a big difference in your Community? The Netherlands just had an 81% Voter Turn Out! That’s a huge number for any group of people to participate in anything. Could you imagine if only 20% of the what we spent in the McDrive Thru went to our favorite Causes? What if you invested 50% of the Eating budget into your biggest asset- Your Good Health? What does this have to do with BBQ? Or Food Event Fundraising? Read on.

First, let me Thank the National Barbecue and Grilling Association (NBBQA) for inviting BBQ RESCUES! to cover their Annual “I Am BBQ” Conference in Fort Worth, TX from March 29th thru April 1st, 2017. The Conference is open to the Public in the Dallas/Fort Worth area. You can attend individual events, or buy an Annual Membership (starting at $50), which includes Discounts and other awesome Goodies all year long. There will also be Educational Seminars for anyone who may be thinking about starting a BBQ related Business. They will cover topics from Budgeting, Menu Planning to “How Do You Waygu?”

For those around the rest of the country, BBQ RESCUES! will try to share as many Tips as possible. I also am honored to have been invited to headline a Children’s Charity benefit BBQ Cookout in Houston, TX. on Sunday March 26th, 2017. This will be the first run of a new program where we will travel the country teaching BBQ Food Fundraiser Bootcamps to Charities, Schools, and other worthy Organizations. The first part will be teaching Recipes and Fo0d Safety Tips to Volunteers. Then invited Guests will arrive later to dine on the foods we prepare as they receive a Cooking Demo on how to prepare the dishes at home.

Here are BBQ RESCUES!’ 7 Tips for How to Prepare a Charity Food Fundraiser:

1. Check Local Laws regarding Food Fundraising Events. One time, Non-Profit events usually do not require paying for the permit, but may still need to register the responsible Certified Food Professional involved and required Proof of Insurance. Laws may vary depending on whether food is served privately to invited Guests, or advertised and sold to the General Public. Some Jurisdictions also make distinctions between Baked Goods, Prepared Ready to Eat Products, and serving Potentially Hazardous Foods.

2. Set Date, Time, Budget and locate an appropriate Venue. Once again, most jurisdictions simply require the supervision of a Food Professional and Potable Hands Washing facilities. So consider whether you need to rent a Church or Commercial Kitchen venue or can do it in the Park and in a volunteer’s Backyard.

3. Plan to keep the Menu Simple, the simpler the better. For Meals- it is good to have Vegetarian, Gluten Free, as well as Meat Options to appeal to the widest pool of possible Participants. [Some jurisdictions require filing HAACP* procedures for each Menu Item.]

4. Pre-Planning is Crucial. Whether you meet by Phone, Skype, In Person or stay in contact via Email, it is important to think through each step of the Event, and assign who is responsible for completing it. First timers, be careful of piling too many tasks on one person. Good Intentions are not enough when it comes to Serving Food Safely.  Try to prepare all Volunteers well in advance, so everyone is not starting from scratch getting instructions during event. It is always helpful to prepare detailed Itinerary .

5.Day of Event- Start Early. Do not underestimate how much time it will take to get from Preparing All Food, Doing Set-Up and Coordinating Event Staff prior to receiving Visitors. Remember you always want to bring your “A” Game, when it comes to serving Delicious Food. Most potentially Hazardous Pre-prepared Foods have a 4 Hour Window to be held and served at proper temperatures.

6. Try to Have Fun! Nothing stresses Customers out more than seeing frantic, disorganized conflicts going on with the Cooking Staff. That is why people are regularly walking on the TV Show- Hell’s Kitchen. Everyone is at the Event to support your Charity so make sure they have a Good Time. They will request you to do it again and again, and you will see your Following grow, along with your Club Finances.

Just so you know, the event was the Santa Monica Police Department’s 120th Anniversary “Birthday” Party. They were expecting up to 500 people! RECIPES

INGREDIENTS (For 4 Servings):

Burgers

  • 1 lb. Ground Beef
  • 2 Tbsp. HEROIC! BBQ Rub (see Homemade BBQ Rub Recipes here)
  • 1 Tbsp. Worcestershire Sauce
  • 1 Tsp. Himalayan Sea Salt (or to taste)
  • 1/2 Tsp. Fresh Ground Pepper (or to taste)

[For Vegetarian Version, Substitute 2″ Thick sliced Eggplant, and season the same way]

Buns

  • 4 Brioche Hamburger Buns; or
  • 8 Grilled Portobello Mushrooms (for ‘Shroom Burger)

 

Superfood Rubbed Potato Chips

  • 1 Bag Potato Chips
  • 2 tbsp HEROIC! Rub
  • Aluminum Foil Pan or Handmade Foil Basket

 

Watermelon “Fries”

  • 1 Watermelon (5+ lbs.)
  • Pink Himalayan Sea Salt (to taste)
  • HEROIC! Rub (optional)

 

Condiments (optional)

  • 4 Slices All Natural Cheddar Cheese
  • 8 Thin Slices Roma Tomato
  • 4 Slices Onion (Grilled Optional)
  • Iceberg Lettuce
  • Hamburger Pickles
  • Ketchup (Low Sugar/Sodium OK)
  • Mustard (Yellow or Deli)
  • BBQ Sauce (see All Natural Homemade BBQ Sauce Video Below)
  • Seasoned Mayo (1 Cup Low Fat Mayo mixed with 1 Tbsp HEROIC! Rub)

DIRECTIONS:

Preparation

  1. Heat Grill. Gas or Charcoal- may use Wood Chips/Chunks to add Smoky Flavor. Kingsford Charcoal/ Products Recommended for Reliability. See Article on How to Smoke on Any Grill.
  2. Prep Burgers. Combine all Seasonings with Ground Beef and separate into 4 Patties. May use Burger Press for more uniform shapes.
  3. Prepare Seasoned Mayo, and slice Onions, Tomatoes and Lettuce for Burgers.
  4. Cut Watermelon into 2 inch Slices and remove Rinds to make Rectangular shape. Keep Chilled.

Cooking

  1. Sear Burgers on high, move to low heat for 4-8 Minutes, depending on desired doneness. Melt Cheese for final 3 Minutes.
  2. Rub Mushrooms with Olive Oil (to prevent sticking) and Grill 3-5 Minutes/per side (depending on thickness). Do not overcook or will be too mushy.

  3. Keep Watermelon chilled until ready to use. Quickly cook 2-3 Minutes/ per side on hot part of Grill for Grill Marks, but should stay crisp. Serve Immediately.
  4. May also briefly Grill Buns for the Brioche Superfood Burger.
  5. Add desired amount of Potato Chips to aluminum pan (or homemade foil basket), Add BBQ Rub and Smoke for 8-10 Minutes (see video).

A little over a year ago a friend contacted me about this event I had never heard of. Called National Night Out, she wanted to know if I could contribute some food. What’s it all about? Since 1984, the National Association of Town Watch (NATW) has sponsored gatherings in over 16, 000 neighborhoods around the country. Along with community outreach with info about crime prevention, safety tips and helpful community programs, the gatherings usually include some sort of Cookout. In most cases, that means BBQ! With over 38 Million Members, the NATW also sponsors a national Dog Walkers Watch program to train the to make our neigh’s even safer.

They also include a Memorial for Police Officers who were lost in the line of duty and donations to local Charities. More than ever, it is an important time to Communities to come together with the dedicated members of Law Enforcement who provide invaluable service for all of us every day. Based on recent events, a couple of Bad Eggs may have to be cracked (on both sides of the law). However, the vast majority of U.S. Citizens and Officers alike are out to do the right thing. We are all much stronger together, than to leave the streets in the hands of Outlaws. [With that said, I can put aside the Soapbox and we can get to the Food].

Last year I participated in the festival at The Greek Theatre in Griffith Park (Los Angeles). In between doling out slices of Smoked BBQ Pizzas from Cheech’s and samples of HEROIC! Rub, I also took the opportunity to launch my new project called BBQ RESCUES! At the time, I had been recently crowned Grill Master Champion on Food Network show Cutthroat Kitchen. It was fun to do interviews with several Police Reps, Community Volunteers and discovering this great A Cappella band called Jondo.

This past May, I was honored to cater the 120th Anniversary Cookout for about 500 Officers and Staff of the Santa Monica Police Department. The event went great for the Tastee BQ Grilling Company. We were pleased to use HEROIC! Rub to grill some of our best Hot Links, Burgers and Smoked Chicken ever. Special Thanks to Kingsford Charcoal and Pit Barrel Cookers for contributing extra supplies for the event. Dunkin Donuts were also supplied the Police event with most of the most impressive Donut Stands we have ever seen. Also Thanks to the SMPD for providing photos and Ciao Bella for extra staffing help.

Skin-on Grilled Potato Salad with chopped Fresh Parsley, Grilled Bell Peppers and Onions offers more Nutrients than the typical Boiled Potato version; Mayo and Mustard are Optional.

Potato Salad seems to be a staple on the Menus of many cultures, from all across America, to Asia and throughout Europe. It is great paired with Grilled Foods like German Sausages, as a side dish with Korean BBQ and of course with American Barbecued Chicken and Ribs. Though Potatoes are not considered the most nutritious vegetables, they are known to be be much healthier served skin-on. Another advantage to Grilling vs. Boiling is they tend to retain more nutrients.

I first thought of doing Grilled Potato Salad while in the process of experimenting with Grilled Potato “Fries”. Having a few extra disks of crispy, perfectly grilled potatoes, I diced them and shared them with a restaurant neighbor who added a delicious dressing and fresh Herbs. Adding natural Wood Smoke takes this Grilled Salad to a new even more delicious dimension. I recently served the dish at a Birthday Catering in the park for a very special 1 Year Old and 130 of her closest Family and Friends. We caught some of it on video.

GRILLED POTATO SALAD

Ingredients (for 6 Servings)

4-6 Medium to Large Red Potatoes

1/2 Green, Red and Yellow Bell Peppers (or any combination of 2)

1 Large Red or White Onion

1 Cup Italian, Greek, or Green Goddess Dressing (or Your Favorite Oil/Vinegar based Dressing)

1/2 Cup Chopped Fresh Parsley

1/4 Cup BBQ Rub ( see simple Home Rub Recipes)

Salt/Pepper to Taste

2-4 Tbsp Mayo and Mustard to Taste (optional)

Directions

1. Get your Gas or Charcoal Grill Smoking before you start Grilling. See: SMOKING USING WOOD CHIPS AND CHUNKS.

2. Wash and Slice Potatoes 1”-1 1/2 inches thick, lengthwise leaving skin on (may remove any blemishes).

3. Marinate Potatoes evenly in wet mixture of 1/2 Cup Dressing, 1/4 Cup Parsley and BBQ Dry Rub (click for Recipe). May reserve 1 Tbsp Parsley for Garish and a sprig to decorate on the side.

4. Grill Potatoes on Medium parts of Grill, flipping after 10 Minutes, checking if some pieces are cooking faster than others. Keep Smoke going on throughout.

5. Slice Onion 1” inch Thick. Cut Peppers lengthwise in Half, seed and soak all in Leftover Marinade from Potatoes.

6. Grill Peppers and Onions up to 10 Minutes per side, or until tender.

7. Once all veggies are cool enough to handle. chop into 1”- 1 1/2” inch Dice. Toss in bowl with up to 1/2 Cup Dressing, Mayo and Mustard to taste. Add more Rub and Salt/Pepper to taste.

6. For serving, sprinkle plated Potato Salad with more Parsley and BBQ Rub. May add a sprig of Parsley on side for decoration. Enjoy.

BBQ RESCUES! Smoking Grilled Steak Recipe

These are the actual Steaks being cooked by Josh on brand new Gas Grill. Note Hobo Pouches in back provide extra Smoky flavor. Metal Wood Chip box isn’t doing much.

For many people, the difference between Grilling and Barbecue comes down to one simple thing- Wood Smoking. Though Chefs can now do it indoors using Smoke Guns, many Home Grillers have yet to introduce the technique into their cooking. Especially those who use Gas Grills. I was recently hired to come to the aid of a wife, who purchased 2 Grilling Lessons as Father’s Day Gifts for her husband. It seems that a brand new Built-in Gas Grill that she gave him for his Birthday, had sat unused for over 9 months.

She put me in touch with her husband, who we will call Josh, by email. He informed me that he planned to invite “a few friends” over after our Lesson, to try out his food from the new Grill. No Pressure. We agreed that he would get most of the meats in advance, so we could do an abbreviated shopping trip before getting started. We did Recipes for Grilled Vegetables, Shrimp, Steak and Chicken Breasts. In this next part, here is the Grilled Steak Recipe.

SMOKING GRILLED STEAK RECIPE

1. Josh had supplied fresh New York Strip and Ribeye Steaks that were 3-4” inches thick.

2. Marinate Steak evenly in wet mixture of Olive Oil, Fresh Chopped Garlic, Parsley and/or Rosemary to taste. Add a generous amount of BBQ Dry Rub (click for Recipe). May also add Worcestershire Sauce to taste.

3. Get your Gas or Charcoal Grill Smoking before you start Grilling. See: SMOKING USING WOOD CHIPS AND CHUNKS

4. Sear Steaks on Medium to Medium High part of Grill, for 2–3 Minutes per side.

5. Once Seared, move all Steaks the Unheated part or Grill and allow to remain in Smoke for 40 Minutes to 1 Hour. Check with Instant Read Thermometer for Rare to Medium. If too Rare, you may cook again on each side oh hot part of Grill. Allow to rest for at least 5 minutes.

6. For serving, slice Steak into Thin Slices create Rare, Medium Rare and Medium sections on Serving Platter. Pour over Au Jus, or serve on the side with BBQ Sauce. Enjoy.

SMOKING GRILLED VEGETABLES RECIPE

1. You can prep a variety of Veggies cut Thick for Grilling, as follows:

Green, Red, Yellow or Orange Bell Peppers- Sliced in half lengthwise, remove core and seeds, press flat

Zucchini, Eggplant, Yellow Squash- Remove Ends, slice lengthwise into 1” inch thick strips

Orange, Purple Carrots- Peel, Remove Ends, Slice lengthwise in Half or 1” inch thick strips

2. Marinate Veggies evenly in wet mixture of Olive Oil, Fresh Chopped Garlic, Parsley and or Rosemary to taste. Add a generous amount of BBQ Dry Rub (click for Recipe)

3. Get your Gas or Charcoal Grill Smoking before you start Grilling. See: SMOKING USING WOOD CHIPS AND CHUNKS

4. Grill Veggies on Medium, or Low Part of Grill, may also use upper Warming Rack.

5. Cook evenly for 5-10 Minutes per side, until tender. Carrots and Pepper may take longer.

6. For serving, cut bigger Veggies into 2-3” inch portions. Enjoy.
