Only a year ago, the thought of attending my first Conference of the National Barbecue and Grilling Association (NBBQA), was quite intimidating. I was not only nervous to meet (and be judged?) by some of the biggest Legends in the BBQ Industry. Even worse, I felt that the Members have all known each other for years, so me and my West Coast “California BBQ” wouldn’t be so welcome in Texas. Fortunately, I was wrong.  And Yes, I will not only be attending I Am BBQ 2018 this March 14th-17th in Fort Worth, TX., but I also have a big Announcement. Stay tuned…

First Day Registration at NBBQA “I Am BBQ 2017”. Must admit, it was a bit intimidating…

Upon arriving last year,  everyone I encountered was very welcoming to this Newcomer, and they went out of their way to make me feel comfortable to be a new Member of the country’s  (maybe the world’s?) largest Association devoted to Grilling. Among the hundreds of people that I met, some will be highlighted through photos and videos in the upcoming weeks. Let me encourage anyone in the BBQ Industry (or if you are adventurous Griller), do yourself a favor and join the NBBQA today. There are tons of Resources and Benefits you can enjoy throughout the year. Also, please try your best to make it to Fort Worth for this year’s “I Am BBQ 2018” Conference.

At Opening Night Reception one of the first people I met was Mark Lambert. Talked to him for about 20 Minutes before finding out he was the new incoming Chairman of the NBBQA. My Bad.

Why should you go? One obvious reason is that you will have a chance to sample more delicious Barbecue than you can “Shake a Fork At”- prepared by some of the most accomplished Grill Masters in the world. Yes, people came from Mexico, China and as far away as Austraila to attend the event last year. Also, you will get a chance to check out some of the Industry’s cutting edge new products, trends and cooking equipment before anyone back at home. This year’s conference will also include a one day BBQ and Grilling Academy on Saturday, March 17th. Finally, the nice variety of Educational BBQ Seminars being offered are both Informative and Fun!

At the last day’s Big BBQ Bash, I was recruited by The Shed BBQ Team, led by outgoing NBBQA Chairperson Linda Orrison aka Mama Shed.

Which takes us to the big Announcement- I have been invited to join the NBBQA Faculty to help with this year ’s event. Also, I will be co-hosting a Seminar on (what else?) “Making BBQ Healthier and Authentic” along with True Made Foods Founder Abe Kamarak. A subject that is increasingly important as we move BBQ into the future. To combat the ailments affecting our Community like High Blood Pressure, Diabetes and Childhood (and Adult) Obesity. People are listening to their Doctors and Nutritionists and seeking to add Healthier Meat Recipes and fresh Veggies to their diets, while trying to limit Calories and the heavy use of Salt and Sugars that exacerbate these conditions. More and more people who love BBQ are looking to see Lighter offerings on Menus, including Vegan Options. Those BBQ Food Operations that take heed will not only attract more new Customers, but also keep their “Regulars” healthy enough to keep coming back.

Class Instructor is Chef Mick Brown

With over 30 years Grilling Experience, Chef Mick Brown has been teaching Private and Group Grilling Lessons, as well as Catering with Tastee BQ Grilling Co. since 2011. He has done BBQ Classes and Demonstrations from Beverly Hills, to San Diego, to New Orleans. One of his larger BBQ presentations was for the historic Los Angeles Garden Club in the Auditorium at Griffith Park. 5 Tips For Starting Your Own BBQ Boot Camp

These are the actual Steaks being cooked by a new Gas Grill Owner, during a  Private BBQ Lesson this past Summer.

Any time is a great time to start a fun BBQ Boot Camp or Grilling Class. BBQ Season is year-round in California. According to the Old Farmer’s Almanac, Winter begins this year on December 21st, 2015.  So most of the country still has weeks or months left for Grilling. We recently received this Inquiry from Edward in Indiana:

Dear BBQ RESCUES!-

Considering your grilling credentials I wanted to see if you could give us some advice. I am the founder of Ordinary Men’s Club. We are a social club for men that is focused on men’s interests, hobbies, pastimes, and passions. Of course Grilling ranks high on most men’s interests. We are preparing to host our first Grilling Class. We are thinking of a 4 hour class for 24 People. Our first hour of class will focus on preparation, seasoning, and basic knife skills. The next 3 hours will be broken into 6-30 minute segments of hands on grilling. The segments will be steaks, chops, chicken, artisan sausages, vegetables, and seafood. We have been working with the local Chefs Academy to be the instructors.

This should provide the guys with a broad knowledge of basic skills and a pretty good meal in the process. Our event will be outdoors and weather could be iffy so AV would be difficult. Do you have any suggestions that would make this a monumental event? Feedback?- Edward in Indiana

5 TIPS FOR STARTING YOUR OWN BBQ BOOT CAMP OR GRILLING CLASS

1. Plan a Strategic Menu and Allow plenty of time for Cooking- My Group Grilling Lessons always start with a Quick Appetizer or Snack, like Smoked Popcorn. BBQ Potato or Tortilla Chips. Then we “Strike while the grill is hot”, preparing the main dish needing the longest cooking time first, and getting it on the Grill. Then we do a series of Appetizers and Side Dishes with any available Grill Space. To do a “Hands On”  Cooking Class for 24, I’d recommend you have at least 2-4 Grills available.

2. Create Informational and Recipe Handouts and provide extra Pens for note taking– It is always good to do handouts that the Class can follow along and take notes. This can include BBQ Technique and Recipe Articles found online, or from Cooking Instructors. If you decide to use my recommended BBQ Rub HEROIC!, there is a California Gold BBQ Rubs New Owner’s Manual, that you can paste and print to hand out in Class.

3. Hire a Professional Chef or Seasoned Grill Master who is willing to share their Techniques- You have already hired someone for your Course, which is great. A good Cooking Instructor should be able to demonstrate Techniques, Teach Food Safety and help Participants do Grilling while answering their Questions.

4. Include Games and Group Building Exercises- Games are not only fun, but they can also help with Team Building and making new Friends. Teams can be picked randomly based on where they are sitting, “out of a hat” or from the same Work Department, Zip Code, Birth Month or share a favorite Color. My favorite is to create list of BBQ related Trivia Questions. from Wikipedia or any trusted online resource. Prizes can include BBQ Utensils, Cooking Supplies, Grocery or BBQ Restaurant Gift Certificates, etc…

5. Be Prepared- Goes without saying, but make sure you have carefully created and fulfilled your Shopping List, including possible take-away Gift Bags for all participants. Give a budget for Supplies to any hired Instructor, or request a full Needs List from them. Also consider the best location based on the availability of Food Preparation Space and hand/dishwashing facilities. Supply hand sanitizer, either way.

Finally, relax and have fun. Nothing ever goes exactly as planned. At the end of the day, if participants leave with the knowledge and confidence to do more Grilling at home, your event will have been a success. Good Luck and Happy Grilling!
